Dali is mainly inhabited by Bai groups, one of the Chinese minority nationalities. As a mixture of southern Chinese and the Bai flavors, the modern Bai cuisines, such as the Shaguoyu, Milk Fan, Er Kuai and the “Three Courses of Tea” (sandao cha) can not be missed. Shaguoyu is a popular and hearty Bai dish made with magnolia petals, mushrooms, and slices of ham, pork, and chicken.
Milk Fan is a popular congealed yogurt-milk mix that can be fried or used to accent other dishes.
Er Kuai is made of quality rice, pressing it into its form after the rice is cooked, so it is called "rice cake". There are different ways in cooking Er Kuai. You can boil, roast, or oil fry it. Er Kuai is a very popular local dish; it is indispensable to every household during Lunar New Year family party.
Pork leg cooked with rock candy is a common household dish of the Chongqing people. The finished dish, red in color and tender to taste has a strong and sweet after-taste.
