• Mutton & Bread (Yang Rou Pao Mo)

  As the most famous and influential snack of Xian, Mutton & Bread is renowned for its pure fragrance and pleasant tastes. You tear a pancake into small pieces and soak them in a bowl of the boiling mutton soup. The soaked pancake is chewy, the soup delicious, and the mutton tender. By taking a small bowl of broth after eating, you will feel abundant fragrance full of mouth and long lasting. The most famous, the Tong Sheng Xiang (Prosperity and Fortune) Beef and Lamb Paomo Restaurant done in Tang Dynasty style, is a time-honored establishment in the Xian Bell and Drum Tower Square.

• Dumpling Banquet

  Although the Dumpling Banquet in Xi'an is still called dumpling, its style, color and taste have changed much, add some new temperament and interest. The most famous Dumpling Banquet is in Xi'an Restaurant and Xi'an Jiefang Road Dumpling Restaurant in Shaanxi province. Xi'an Dumpling Banquet is brought forth new ideas in its color, fragrance, taste and style; meanwhile, is added ancient culture. Thus, the dumpling is no longer one kind of simple flour food. People change the tradition of using pork, beef, mutton and vegetable as its filling, chicken, duck, fish, pork, meat, egg, delicacies from land and sea and fresh vegetable, etc, in one word, include steaming, frying, toasting, etc. They add many tastes such as sour, sweet, peppery, hemp, etc. Concerning the style, they make out various pretty and lovely styles such as flower, bird, grass, fish, etc. People who taste Xi'an Dumpling Banquet have had a deep happy memory. This is not only because its beautiful styles and delicious taste, but also because it includes plentiful cultural intension. For example, "Baochuan steamed dumpling", it uses shepherd's purse and pork as filling, draws its material from the legend of Wangbaochuan digging shepherd's purse in the south of Changan city. "Black Rice steamed dumpling", uses the black rice as filling, draws its material from the legend that Zhangqian dreamed Wenqu, found black rice and went to the Western Region. The last dish is "chrysanthemum chafing dish", waiter or waitress boil pearl dumpling like the size of smallest finger in front of the guest, then, distribute to every people.

• Other snacks and foods in Xi'an:

  Qishan Saozi Noodle made of high-quality flour, together with pork, day lily, egg, tree mushroom, bean curd and garlic stem, and several flavoring. It has the tastes of sour and chili, and reserves fragrance in mouth after eating. Guan Tang Bao, the well-known flavor snack in Xian, Crystal Cake, has beautiful appearance, tastes oily rather than greasy, and has thick fragrance of rose. It is the representative of Qin-style Snack, reputed as “the head of Qinstyle”, Steamer Pastry, a type of sweet pastry made from glue rice and red jujube and gets its name as it is steamed in the steamer evolved from “Zeng”, which is a kind of age-old kitchen utensil. Huang Gui Shizi Cake, also called Crystal Shizi Cake, is a flavor snack made of flour and persimmon. Guokui, one of the eight bugbears in Shaanxi, looks like armet just as its name implied.
